There’s no need for take out when Dei Fratelli is in the pantry.
A well-stocked pantry is key to quick and healthy vegetarian and vegan meals. A selection of frozen and canned staples can lead to a number of meals with or without leftovers. When it comes to canned items, beans and tomatoes top the list of must-haves. Soups, stews, loaves, pasta dishes, and pizza can all make it to the table in less than 45 minutes if the right products are on hand.
Dei Fratelli products were new to me before I received some to try. I’d seen the products in Publix, but would reach for my usual. One would not think there was a difference in canned tomato products, but one taste proved otherwise. Canned tomatoes in Tomato Pie? With Dei Fratelli, it was possible and almost as good as one made with perfect summer tomatoes. Cool weather favorites made with Dei Fratelli products include chili, sloppy joes (crumbled veggie burgers sauteed in a pre-made mix), and spaghetti with garden sauce. Dei Fratelli makes a fantastic pasta sauce and the addition of fresh onions, garlic, and mushrooms made it even better. Gluten-free, low sodium, and Kosher products are available.
My family’s favorite quick meals start with this vegetable soup. As written this recipe serves 6-8. Double the recipe and make a large pot at the beginning of the week and enjoy it all week long.
Quick Garden Veggie Soup
One medium onion, diced
One medium stalk celery, diced
1 clove garlic, minced
1 lb. Frozen mixed veggies (any variety works)
1 14.5 oz. can Dei Fratelli Diced or Chopped Tomatoes, any variety
2 quarts vegetable stock
soy sauce to taste (optional)
nutritional yeast to taste (optional)
Heat a 5-6 quart pot over medium heat. Add a tablespoon of water, then onion and celery. Saute vegetables until soft. Add garlic and stir. Stir in frozen vegetables, and cook, stirring occasionally. When vegetables are cooked, add tomatoes, with liquid, stir, and cook for two minutes. Add stock and water to cover vegetables. If desired, add soy sauce and nutritional yeast with the stock and water. Simmer for 15 minutes and serve.
